Crockpot Chicken Tacos

I admit I'm not the best cook.
However, with the help of Pinterest (and MyChocolateTherapy.com), I'm slowly getting better.

Take this recipe for example:
- 1 pkg chicken breasts
- 1 packet of taco seasoning
- 16 oz. jar of salsa (I only had a 32 oz. jar on hand)

Low Cal French Toast

Part of this whole "live a healthier life" trip I've chosen to embark on means I have to reevaluate food. 
Which is very difficult for me because:
  1. I've had a terrible diet my entire life.
  2. As you know, I'm a picky eater who hates pretty much every vegetable/healthy food out there.
  3. 90% of my high school meals involved peanut butter sandwiches and chips (in fact, my meals at work now consist of peanut butter sandwiches on a fairly regular basis).
  4. I don't do diets, I fail them quite easily - when I'm told I can't eat something, it just makes me want it more. 
My solution? Figure out ways to make my favorite foods healthier. 

I recently read an interview with Paula Deen who said, "deprivation isn't the key - moderation is." Coming from a woman whose mantra was "MORE BUTTER," I feel like I can relate to her (my mantra being "MORE SWEETS"). So while I'll be attempting to eat healthier, I'm not going to completely cut back on the sweets. Let's be real - I'd go crazy.

2013: MN Races


I finally sat down and went through all of the races happening in MN this year, and compiled a list.  Then, with Tom's help, we finalized that list, and I'm happy to share that below is what we're planning to take on! Last year we participated in the Securian Winter 5k in January (my first 5k ever - I finished at 36:35), Irish for a Day 5k (I actually didn't compete becuase I came down with a horribly awful cold), and the Color Run. This year, I wanted to not only increase the number of races, but also try my first 10k - it's one of my New Year's resolutions :)

2013 Resolutions

Well, the new year is here. Time to start fresh, become the better "you" you've always dreamed of, and make ridiculous resolutions that you'll never follow through with. Sorry - that's the pessimist in me coming out...but seriously, who actually accomplishes the resolutions they set at the beginning of the year? I know I never do. Yet I still set them every single year. So, I've decided that one of my resolutions this year is to follow through with all of my resolutions. If you want to know the others, they are as follows:

  1. Lose 20 pounds
  2. Run a 10k
  3. Eat lunch away from my desk at least 2x a week
  4. Read 42 books
  5. Limit frivolous spending
